Breakfast Pizza Recipe With Crescent Rolls

This easy Crescent Roll Breakfast Pizza starts with a crescent roll crust and is topped with eggs, ham, green peppers, and pepper jack cheese. Easy to feed a group and easily customizable to suit your family!

I love breakfast foods and I don't just reserve them for breakfast time, we often have breakfast for dinner. I like to fancy it up a bit with this breakfast pizza made with crescent roll dough. It is super easy to make, you'll have breakfast (or dinner) done in no time!

The beautiful thing about this pizza is you can easily switch it up to please your family. Don't eat meat? Skip the ham. Don't like peppers? Use spinach or tomatoes. Can't do heat? Use mozzarella instead of pepper jack. It's really easy to make it whatever way you like.

Other breakfast foods we enjoy include bacon & spinach pizza, ham and potato casserole, pancakes, or buttermilk waffles.

INGREDIENTS

Below is a list of ingredients with some helpful tips and suggestions for substitutions. Scroll all the way down for the full recipe card with amounts & instructions.

CRESCENT ROLL DOUGH – You'll unroll crescent roll dough to make the crust. Pick up two 8oz packages.
EGGS – I use large organic, free range eggs. Some breakfast pizza recipes have you scramble the eggs before assembling it. That isn't the case here – you'll pour the whisked eggs directly onto the crust.
HAM – This is a great use for leftover ham, but you can also buy diced ham at the market.
BELL PEPPER – Diced green bell pepper.
ONION – Yellow onions keep for a long time so they're easy to have on hand and they're cheap.
PEPPER JACK – You know I highly recommend shredding your own cheese to avoid the anti-caking agents they put on pre-shredded cheese. It melts better. If you don't like pepper jack, mozzarella will work well.

TOOLS FOUND ON AMAZON TO HELP YOU

  • Pizza Pan – I used a 12″ pizza pan.
  • Veggie Chopper – I love this thing. It is perfect for dicing the peppers & onions but it would work for the ham as well.
  • Box Grater – I shred my cheese with a simple box grater.
  • Pizza Wheel – Make cutting the slices easy with a pizza wheel.

HOW TO MAKE EASY BREAKFAST PIZZA

STEP ONE: Prep the Crust. Unroll the crescent roll dough & shape it to fit a greased 12″ pizza pan, pinching together the seams. (alternatively, you can shape it into a rectangle on a sheet pan). Build up the crust because it will act as a barrier to hold the eggs in.

STEP TWO: Whisk the Eggs. Crack the eggs into a bowl, season with salt & pepper, and whisk together. Pour the eggs into the prepared pizza crust.

STEP THREE: Top It. Sprinkle the ham, peppers, and onions evenly over the pizza and then top with the shredded pepper jack.

STEP FOUR: Bake It. In a preheated 375 degree oven, bake the pizza for 25-30 minutes or until the crust is golden and the eggs have firmed up in the center.

STEP FIVE: Serve it. Let the pizza cool slightly before slicing and serving.

CAN I MAKE IT ON A SHEET PAN?

If you'd rather have a rectangle pizza instead of a circle, you can definitely prep this on a sheet pan. Make sure you press the seams together really well so your crust stays together. Same rules apply – make a crust barrier so that the raw eggs don't leak over the side.

CAN I HALVE IT?

You can easily halve this recipe. Use one tube of crescent roll dough instead of two and use three eggs instead of six. Check it at 15 minutes, it will likely be done cooking by 20 minutes.

WHAT CAN YOU USE INSTEAD OF CRESCENT ROLLS

You don't have to use crescent rolls for the crust. You can also pick up a tube of pizza dough, or Trader Joe's sells a good ready-to-bake pizza dough. Or you could make it yourself, of course.

ALTERNATIVE TOPPINGS

I like that this version is much like a Western/Denver omelette with the ham, peppers, and onions, but if that doesn't float your boat, you can easily swap out the toppings.

Some other topping ideas include: crisp bacon, crumbled sausage, spinach, tomatoes (sun dried or fresh),

SERVING SUGGESTIONS

Serve this pizza with some fresh fruit, some juice, maybe a side of oven baked bacon, and some cinnamon quick bread for a sweet finish.

To kick up the spice, drizzle some sriracha or tabasco sauce over the top before serving.

HOW TO STORE IT

You can store any leftovers in an airtight container in the fridge for up to 3 days.

To reheat, I recommend the oven or the air fryer so the crescent dough doesn't get soggy.

CAN YOU FREEZE IT

Leftover breakfast pizza can be frozen. Wrap the pizza tightly in plastic wrap then wrap it in foil before placing in a freezer bag. It will keep for up to 3 months in the freezer.

  • 2 8 oz crescent roll dough (two 8 oz tubes)
  • 6 large eggs
  • ¾ cup diced ham
  • ½ cup green bell pepper diced
  • ¼ cup yellow onion diced
  • 8 oz pepper jack cheese shredded
  • salt & pepper to taste
  • Tabasco or Sriracha optional
  • Preheat the oven to 375 degrees Fahrenheit and spray a 12-inch pizza pan with non-stick spray.

  • Unroll the packages of crescent dough and spread it out onto the prepared pizza pan, pinching together the seams.

  • In a small bowl, whisk the eggs together and season with salt and pepper before pouring over the croissant dough.

  • Sprinkle the ham, pepper, and onions across the dough.

  • Top with the shredded pepper jack cheese.

  • Bake for 25-30 minutes, or until the crust is golden and a toothpick inserted in the middle of the pizza comes out clean.

Switch up toppings to suit you – bacon, spinach, tomatoes, sausage.

Mozzarella can be used in place of pepper jack.

Pizza dough can be used in place of crescent roll dough.

Store leftovers covered in the fridge for up to 3 days. Reheat in the oven or air fryer.
